BANANA PUDDING
2 c. sugar
2 c. milk
1/2 c. flour
4 egg yolks, save whites for meringue
1 stick butter
1 tsp. vanilla
1 pkg. vanilla wafers
3 or 4 bananas

Mix sugar and milk in a saucepan and cook over medium heat until mixture begins to thicken. Remove approximately 1 cup of mixture and add slightly beaten egg yolk and return to saucepan. Continue cooking until desired pudding thickness has been achieved. Remove from heat and add vanilla and butter; stir until butter is melted. Let pudding cool 5 to 10 minutes. Prepare baking dish with layers of vanilla wafers and sliced bananas. Pour pudding into baking dish; add more wafers and bananas, if needed.

MERINGUE:

4 egg whites
1 tsp. cream of tartar
1/2 c. sugar
1/2 tsp. vanilla

Beat egg whites until stiff; add cream of tartar and vanilla. Add sugar, 1 tablespoon at a time, while continuing to beat. Spread over prepared pudding. Use a spatula to create pretty peaks. Bake at 350 degrees until golden brown.
