GRANNY JONES' BANANA PUDDING | |
1/3 c. sugar 2 tbsp. cornstarch 1/8 tsp. salt 2 c. milk 2 egg yolks, beaten (save egg whites for meringue) 2 tbsp. butter 2 tbsp. vanilla flavoring 3 or 4 lg. bananas 1 box vanilla wafers In 2 quart saucepan, mix egg yolks and milk over medium heat. Gradually stir in sugar mixture (sugar, cornstarch and salt). Cook until mixture thickens and begins to boil, stirring constantly. Boil and stir for one minute. Remove from heat and add butter and vanilla. Blend. Layer wafers, bananas and pudding until all is used. Whip egg whites with a sprinkle of sugar until fluffy. Spread on top of pudding and boil in oven until top is browned. |
