BANANA CREAM PIE 
1/2 c. sugar
5 tbsp. flour
1/2 tsp. salt
2 c. milk
2 eggs, separated
1 tbsp. butter
1/2 tsp. vanilla
3 ripe bananas
1 (9-inch) baked pie shell

Combine sugar, flour and salt in top of double boiler; add milk slowly. Mix thoroughly. Cook over rapidly boiling water until well thickened, stirring constantly. Cook 10 minutes longer, stirring occasionally, over low heat. Stir small amount of hot mixture into egg yolks which have been slightly beaten. Then pour back into hot mixture while beating. Cook a minute longer. Remove from heat. Add butter and vanilla. Cool. Peel and slice bananas into pie shell and cover with filling immediately.

MERINGUE:

Beat 2 egg whites until stiff, adding 3-4 tablespoons of sugar gradually. Spread over pie and bake about 15 minutes at 350 degrees.
