MEXICAN DELIGHT | |
1 c. sugar 1/4 c. boiling water 2 c. sugar 1 c. evaporated milk 2 tsp. grated orange rind 1 c. nuts Caramelize 1 cup sugar by stirring in hot frying pan until brown, do not burn. Add boiling water and boil until sugar is dissolved. Add 2 cups sugar, milk and pinch of salt. Boil to soft ball stage, stirring constantly. Just before candy is done, add grated orange peel. Cool, beat until thick. Add nuts. Drop by spoonfuls or put in 8" square pan. |
