WHOLE-WHEAT BANANA NUT MUFFINS 
2 cups whole-wheat flour
1/2 cup sugar (I use Splenda for baking)
1 tbsp. baking powder
1/2 tsp. salt
1 cup milk (I use 2%)
1 egg, beaten
1/3 cup vegetable oil
3 mashed bananas
1/2 cup walnuts

Preheat oven to 400°F. Grease a 12-cup muffin pan.

Sift flour, sugar (or sugar substitute), baking powder, and salt into medium bowl; make well in center.

Mix milk, egg, oil, bananas and walnuts into a small bowl. Pour mixture into well. Mix batter until moisten; do not over mix. Spoon batter into prepared muffin cups.

Bake at 400°F until toothpick inserted in center comes out clean or until muffins are golden brown, about 15 minutes.
