WHOLE WHEAT BANANA MUFFINS | |
3/4 c. + 2 tbsp. flour 1/4 c. whole wheat flour 1 1/2 oz. (approx. 1 1/3 c.) bran flakes cereal 1 tsp. baking powder 1/4 tsp. baking soda 1/8 tsp. ground allspice 1 1/2 very ripe med. bananas 1/2 c. buttermilk 1 egg 2 tbsp. brown sugar 2 tbsp. + 2 tsp. vegetable oil 1 tsp. vanilla 4 pitted dates, chopped (or use raisin bran cereal) Preheat oven to 375 degrees. Combine flours, cereal, baking powder and soda and allspice. Set aside. Process bananas, buttermilk, egg, sugar, oil and vanilla until smooth. Add dry ingredients and mix until combined. Grease 8 (2 1/2") muffin tins. Fill with batter; fill empty cups with water. Bake 20 minutes. Let cool. 1 muffin = 185 calories. |
