MAMA'S FANTASTIC "TEXAS 15 BEAN
SOUP"
 
2 c. mixed beans
2 1/2 qts. water
1 ham bone
2 stalks celery, chopped
2 lg. onions, chopped
1 bell pepper, chopped
6-8 cloves garlic
1 tbsp. paprika
1 (28 oz.) can stewed tomatoes
Juice of 1 lemon
Parsley, chopped
Salt, pepper, Tabasco and
Worcestershire sauce to taste

Soak beans overnight in a large pot; drain. Add water, ham bone, celery, onions, bell pepper, and garlic. Simmer 2 1/2 hours; stir, add more water when needed. Add seasonings and tomatoes; simmer 1 hour.

Just before serving: Add juice of 1 lemon and chopped parsley. For a thicker soup, just throw a small amount of spaghetti into the pot along with everything else. Enjoy!

You can use small sausages or ham hocks instead of ham bone.
