FRENCH MARKET SOUP (15 BEAN SOUP) | |
3 qt. pot (iron is best) Ham bone with 1 lb. trimmings 1 lg. onion, chopped fine Juice of 1 lemon 1 green banana pepper 1 can tomatoes 1 clove garlic or garlic salt (opt.) 1 or 2 lbs. shrimp, chicken or sausage 1 1/2 cups mixed beans, as listed below: Baby "Fordhook" limas Small "Michigan White" navy beans Large "Great Northern" white navy beans Large white butter beans New Orleans red kidney Italian "Fave" beans Black "Chino" beans Green & yellow split peas Garbanzo or chick peas Blackeyed peas Pinto beans Field peas Lentils Barley Before cooking, wash 1 1/2 cups of bean mixture. Cover with water, add 1 tablespoon salt and soak 3 hours or overnight. Drain bean mixture, place in 2 quart water, add ham bone and boil slowly for 2 1/2 to 3 hours. Add remaining ingredients and allow to cook for 30 minutes. |
