FRENCH MARKET SOUP 
1 1/2 c. bean mix (see note)
3 ham hocks (or piece of ham)
1 lg. onion, chopped
1 lb. smoked sausage
1 (1 lb.) can tomatoes
2 garlic cloves, crushed
2 tbsp. lemon juice
1 banana pepper, chopped
Pepper to taste
Salt, if necessary

Rinse and drain bean mixture; cover with water and soak overnight. Cook in same (soaking) water with ham hocks and onions (adding water as needed) about 3 hours or until tender, but do not boil hard. Remove hocks; cut meat from hocks and add it with other ingredients to bean mixture. Simmer 30 to 60 minutes longer, adding more water when necessary.

NOTE: For bean mix, combine one pound of each of from 9 to 13 types of beans. Divide the mixture into 1 1/2 to 2 cup packets and gives as gifts along with this recipe.
