BEAN SOUP | |
1 lb. great northern beans, navy (dry) 1 tsp. baking soda 1 tsp. dry mustard 1 lg. onion 1 or 2 celery leaves 1/2 c. brown sugar or maple syrup 1 lg. ham bone or bacon, cubed Water Milk Place beans in a large pot and add water to cover at least 1 inch over the beans. Bring to a boil, add soda (soda will foam up), simmer for 12 minutes. Drain, rinse under cold water. Return to pot, add onions, celery leaves, and dry mustard. Stir, add ham bone and simmer until beans are soft. Add milk stirring to right consistency as desired. About 1 to 2 hours. |
