SENATE BEAN SOUP 
1 lb. dried beans (marrow, navy, great northern, or pea bean)
5 qts. water
1 lg. smoked ham hock (bone)
3 potatoes, cooked & mashed
2 onions, chopped
1 c. celery, diced
Salt & pepper

Wash beans and cover with the water. Bring to a boil. Boil 2 minutes. Remove from heat and let stand 1 hour. Bring again to boil and simmer, covered, let stand 1 hour. Bring again to boil and simmer, covered, 2 hours or until beans begin to mush. Add all but salt and pepper and simmer 1 hour longer. Remove bone, cut up meat, and return to soup. Season to taste.
