SENATE BEAN SOUP | |
1 lg. cooked smoked ham bone 1 lb. dry white beans 2 onions 4 or 5 stalks celery, enough for 1 c. 1 tsp. garlic powder Salt and pepper Place ham bone in large pot and cover with water. Bring to boil, lower heat, cover, simmer for 1 hour. Wash beans thoroughly. In another pot, cover beans with water. Bring to a boil. Remove from heat and let stand while ham bone is simmering. Peel onions and chop. Wash and chop celery. Remove pot with ham bone from heat. Drain beans and add to ham along with onions, celery, and garlic powder. Bring again to boil, lower heat and simmer, covered for 2 hours or until beans are soft. Remove ham and bone. Cut meat on chopping board and return meat to soup. Add salt and pepper to taste. You may mash some of the beans to thicken soup. The onions, celery and garlic may be left out and about six whole allspice may be put in when cooking ham bone instead. |
