DARCY'S BREAKFAST FRENCH TOAST 
day old bread
eggs
vanilla
vegetable oil, for frying

Heat about an inch of oil in a good skillet till you begin to hear it pop. While the oil is heating prepare the bread.

Whisk 1 to 1 1/2 eggs per slice of bread. Add a little vanilla. Dip bread till both sides are well covered with egg.

In a big skillet you can fry about 4 pieces at once.

Let the bread cook in the really hot oil until it is dark brown, crunchy and the crust in crisp (will become your favorite part of the French toast) then turn and allow the other side to become well-browned and crisp.

Pick out of the skillet with tongs and let the oil drain out over the skillet.

OK, slather with butter and syrup! The crunchy parts are the best! Yum!
