ALMOND ITALIAN COOKIES | |
1/2 c. (1 stick) butter 1 c. sugar 1 egg 1 tsp. almond extract 2 c. all-purpose flour, sifted 1 tsp. baking powder 2 tbsp. milk 2/3 c. chopped almonds 1/4 c. apricot jam or orange marmalade Cream butter, sugar, egg and flavoring. Add flour, baking powder and milk. Knead until well mixed. Pinch off small pieces of dough and roll between palms into balls. Roll balls in chopped almonds and place on greased cookie sheets. With thumb, make indentations in center of each cookie and fill with marmalade or apricot jam. Bake at 400°F for 12 to 15 minutes. Variation: Replace almond flavoring with lemon, orange or vanilla extract. Makes 2 dozen. |
