ALMOND BAR COOKIES 
CRUST:

1 c. butter
1 c. sugar
1/4 c. brown sugar
1 egg
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda

FILLING:

3/4 lb. almond paste
3 eggs
1 c. sugar

Combine crust ingredients and pat 1/2 of mixture in a 9 x 13 pan. Mix filling well and spread over first layer. Cover with remaining dough. Bake 40 minutes at 325 degrees. When cool, sprinkle with powdered sugar or glaze (powdered sugar, milk and almond flavoring).

OMG... these are dangerously good! I made these today and have fallen in love! My guilty confession is that I like many cookies/bars just undercooked a bit, and this satisfied all my cravings today! The bars are buttery, flaky and have a soft and gooey filling inside!!! Definitely a hit! I would even suggest making them without the filling and substitute the vanilla for almond extract for those who are looking for a more sturdy cookie-like bar.
