ALMOND ROCCA COOKIES 
1/2 lb. real butter
1 c. brown sugar
40 soda crackers
12 oz. semi-sweet chocolate chips
1 c. finely chopped nuts

Oil large cookie sheet. Place soda crackers on cookie sheet. Boil butter and brown sugar for 3 minutes (you melt butter, add brown sugar then boil, timing important, do not burn mixture). Pour over soda crackers. Place in 350 degree preheated oven for 5 minutes or until crackers float. Put chocolate chips on top to melt. You may put back in oven for a few seconds to melt and spread over crackers. Remove from oven, and sprinkle with finely chopped nuts (or your choice). Cut when slightly cooled and store in an air tight container.

It turned out awesome!! Although next time I will melt chocolate chips on stove, b4 speading over the crackers. All in all... awesome & delish!! =)
