CHINESE ALMOND COOKIES 
1 c. butter
3/4 c. sugar
1 tsp. almond extract
2 c. sifted flour
1/2 tsp. baking powder
1/2 c. ground almonds
Sugar
36 whole blanched almonds

Cream butter and sugar, add almond extract. Sift flour and baking powder together. Mix gradually into butter mix. Stir in ground almonds. Form into balls using rounded tablespoons of dough. Roll in sugar, place on cookie sheet. Press flat, top with whole almond. Bake 10 to 12 minutes at 375 degrees. Makes 3 dozen.
