FOUR LAYER DELIGHT AKA MIKE'S HUBBA HUBBA | |
1 1/2 cups all-purpose flour 3/4 cup (1 1/2 sticks) butter, softened 3/4 cup chopped walnuts 1 (8 oz.) pkg cream cheese, softened 1 cup confectioners' sugar 1 (12 oz.) tub Cool Whip, divided 2 (3 oz. ea.) pkgs. jello instant pudding (may use any flavor but chocolate or vanilla are the most common) 3 cups milk Layer #1: Cream butter together with flour and walnuts until well mixed. Preheat oven to 350°F. Press mixture into a 9x13-inch baking pan and bake for 20 to 25 minutes or until golden brown. Cool completely. Layer #2: In the bowl of an electric mixer, mix together cream cheese, confectioners' sugar, and 1 1/2 cups of Cool Whip until smooth. Spread evenly over crust. Layer #3: Prepare pudding with 3 cups of milk. Mix with electric mixer until thick and spread over cream cheese layer. Layer #4: Spread remaining Cool Whip over pudding and garnish with chopped nuts if desired. Chill before serving, and refrigerate left overs. Note: Butterscotch, white chocolate and pistachio are also a few more good pudding flavors that work well for this recipe. HOLIDAY SUGGESTIONS: St. Patrick's Day: Prepare with pistachio pudding and garnish with green mint chips. Easter Sunday: Prepare with vanilla or white chocolate pudding, and garnish with green tinted coconut shreds and jelly bird eggs and/or Robin eggs. Fourth of July: Prepare with vanilla or white chocolate pudding and garnish with fresh strawberries or raspberries, white chocolate chips, and fresh blueberries to decorate it like the American flag. Halloween: Prepare with chocolate or chocolate fudge pudding and garnish with candy corns, and/or Nutter Butter cookie halves standing upright to resemble gravestones. Thanksgiving: Prepare with pumpkin flavored instant pudding and garnish with candy corns. Christmas: Prepare with white chocolate flavored pudding and garnish with crushed candy cane or hard peppermint candy pieces. Submitted by: Mike Ford |
