MEDITERRANEAN SALAD 
4 c. cooked rice
1 c. sliced olives
2 (6 1/2 oz.) cans tuna
1/2 c. crumbled bacon
1/2 c. sliced radishes
1 c. each chopped red, green, and yellow peppers
1 c. thinly sliced celery
1/2 c. sliced green onion
1 c. frozen peas, thawed
Lemon Herb Dressing (following)
Salad greens

Combine rice, vegetables, and dressing. Cover and chill several hours. Drain and flake tuna and add to salad. Mound on lettuce and sprinkle with bacon.

LEMON HERB DRESSING:

1 clove garlic
3/4 tsp. salt
1/4 c. each olive oil and safflower oil
1/4 c. fresh lemon juice
2 tbsp. minced fresh herbs (basil, thyme, oregano) or 2 tsp. dry herbs

Use food processor or blender, whisk together. This is a very bland dressing. I would use Zesty Italian Dressing.
