CHILI SAUCE 
STEP ONE:

4 qts. tomatoes, blanched
1 c. chopped sweet red peppers
1 c. chopped celery
1 c. chopped sweet green peppers
1 c. chopped onions

STEP TWO:

1-2 c. brown sugar
1 c. vinegar
2 tbsp. salt
1/4 tsp. ginger
1/2 tsp. ground allspice
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves

Mix together ingredients of Step One in a large pot. Strain off 3 cups tomato juice, then add ingredients of Step Two to the pulp. Boil to desired consistency, stirring often. Put into hot jars and seal. Takes approximately 3 hours to prepare.

Makes approximately 6-8 quarts.
