CHILI SAUCE 
1 gal. tomatoes
2 c. onions
2 c. red sweet peppers
1 pod hot red pepper
1 c. sugar or little more if you like sweeter
3 tbsp. salt
1 tbsp. mustard seed
1 tbsp. celery seed
3 tbsp. mixed pickling spice
2 1/2 c. vinegar

Skin tomatoes before chopping. Chop all vegetables before measuring. Tie mixed spices in bag Mix all ingredients except spice bag and vinegar. Add them after mixture has boiled 30 minutes. Now add and also vinegar and cook slowly until cooked down to no more "free" liquid. Pour hot into sterilized jars and seal immediately. Stir the sauce and watch frequently so it doesn't burn.
