CHICKEN STUFFED WITH PEPPERONI AND CHEESE | |
4 chicken breasts, deboned & skinned 4 lg. pepperoni slices 4 slices pepper cheese 1 egg, beaten 1/2-1 c. dry bread crumbs 2 tbsp. olive oil Pound chicken with meat mallet until thin taking care not to tear the meat. Place 1 slice pepperoni and 1 slice cheese on each. Roll and secure with toothpicks. Dip each into egg then bread crumbs and cook over medium heat in olive oil until cooked through. |
