CHICKEN STUFFED WITH PEPPERONI
AND CHEESE
 
4 chicken breasts, deboned & skinned
4 lg. pepperoni slices
4 slices pepper cheese
1 egg, beaten
1/2-1 c. dry bread crumbs
2 tbsp. olive oil

Pound chicken with meat mallet until thin taking care not to tear the meat. Place 1 slice pepperoni and 1 slice cheese on each. Roll and secure with toothpicks. Dip each into egg then bread crumbs and cook over medium heat in olive oil until cooked through.

Omg!!!!This recipe was soooooooo good. It was so good I made it 2 days in a row. I did alter the recipe, I used flour instead of bread crumbs.... U people who like to use bread crumbs, I don't know why! All it does is cook the bread crumbs faster and your chicken won't be done. Who knows? But other than the crumbs it was cool.
