CHICKEN CHEESE STRATA 
8 slices of day old enriched bread
2 c. diced cooked chicken or turkey
1/2 c. chopped onion and 1/2 cup chopped green pepper
1/2 c. finely chopped celery
1/2 c. mayonnaise
3/4 tsp. salt, dash pepper
2 eggs, slightly beaten
1 1/2 c. milk
1 can cream of mushroom soup
1/2 c. grated sharp cheddar cheese

Butter two slices of bread and cut in 1/2 inch cubes; cut remaining bread into 1 inch cubes. Place about half of unbuttered cubes in bottom of dish.

Combine chicken, vegetables, mayonnaise and seasonings. Spoon over the bread cubes. Sprinkle remaining unbuttered cubes over chicken mixture.

Combine eggs and milk; pour over all. Cover and chill one hour or overnight. Spoon soup over top. Sprinkle with buttered cubes. Bake at 325 degrees for an hour. Sprinkle cheese over top the last few minutes.
