CHOCOLATE CHIP BAR COOKIES
This makes a fluffier and softer bar cookie than the regular Toll House pan cookie.

1/2 cup (1 stick) butter, melted
2 eggs
1 tsp. vanilla
2 cups all-purpose or unbleached flour
2 tsp. baking powder
1/2 tsp. salt
6 oz. semi-sweet chocolate chips (1 cup)

Heat oven to 350°F. Grease 9x13-inch pan.

In large bowl combine sugar and melted butter; blend well. Add eggs, 1 at a time beating well after each addition. Stir in vanilla. Spoon lightly into measuring cup, flour, level off. Add flour, baking powder and salt. Mix well. Stir in chocolate chips. Spread in prepared pan.

Bake at 350°F for 25 to 35 minutes or until set. Do not overbake. Cool before cutting into squares.

Makes up to 36 bars.

Chocolate Chip Bar Cookies

The taste was amazing. The bars took longer to cook at our altitude, (6400' 35 minutes) but the results were snapped up so quickly I have to make them again, soon.

This was a great recipe! I have never made cookie bars before and found that this recipe was exactly what I was looking for. I used 1 3/4 cups of Ghirardelli milk chocolate chips instead of semi sweet chips, and they taste fantastic! Thanks for the recipe!

Add a heaping serving spoon of crunchy peanut butter, amazing! Makes them smoother than without, a hit!

Making this now, made it in layers, layer of cookie dough, layer of left over icing / marshmallows, layer of cookie dough. Used 1/2 cup white sugar, 1 cup brown.

Live in Denver, so added 2 tsp flour, 1 pinch baking powder, baked at 340°F, monitoring with a toothpick after 22 minutes. I didn't check again until 27 minutes, the toothpick came out pretty clean every time (unless I hit a chip) but it didn't seem ready so I waited until the edges were lightly browned and removed it from the oven at 30 minutes and let sit for 5 minutes. It was a little too moist but not too bad (wanted bars so that they would keep longer than cookies).

Other variances: Also added 1/2 tsp carob powder. My brown sugar was quite dry so I sprinkled some water to help mix but was probably not necessary since I had extra large eggs. I also pre-beat the eggs, so some air was blended into it upon mixing but possibly over-mixed (rubbery).

Results: MMMmmm... can't really taste the carob powder but I didn't want to overdo it. With the altitude and in a 9x13 glass casserole dish, they are almost exactly an inch thick. I'll probably try it with less sugar and more flour next time, should the compensation be 1:1?

 Beryl (Pennsylvania) says:
This recipe is the best chocolate chip bar ever - tastes kinda like it has caramel in it. I used dark brown for half the sugar (didn't have enough light brown)and they were moist and delicious. A recipe I will definitely use over and over. Thanks!

 Adam (California) replies:
Delicious! Beryl's comment makes sense, as the first thing you do is combine melted butter and brown sugar, which is basically the recipe for caramel.

Just a word of advice, though; use the "toothpick test" as opposed to judging by softness. The finished product has more give than you would expect, which might deceive you into over baking, which is the worst thing you could do to these bars.
