CAESAR'S SALAD DRESSING | |
1 cup extra virgin olive oil 1/2 cup good quality organic red wine vinegar (more or less, to taste) 1 tsp. crushed garlic 1 1/2 tsp. lemon juice 1 tbsp. Grey Poupon mustard 1 tsp. Worcestershire sauce 2 egg yolks 1/2 tsp. sea salt 1/2 tsp. pepper Combine all ingredients in a blender and refrigerate for at least 2 hours. Taste and adjust seasoning, adding salt, pepper, etc. Wash and thoroughly dry lettuce. Before serving, sprinkle Parmesan cheese and croutons over Romaine lettuce. Toss with butter toasted croutons, if desired. Note: Some people prefer a salad dressing that has more or less vinegar, and our taste buds change as we age. If you prefer a less acetic taste, add more olive oil and choose an organic high quality vinegar such as Sherry vinegar or other vinegars made from wine. You can also replace some of the vinegar with freshly squeezed lemon juice. In a good salad, the freshness and quality of the ingredients is what counts. When it comes to dressing, in many instances, less is more - don't overdress! |
