CAESAR SALAD 
CROUTONS:

1/2 loaf Italian bread, cubed
3 garlic cloves, chopped
1/4 c. olive oil

DRESSING:

1/3 c. olive oil
1/2 c. Parmesan cheese
1 egg, slightly beaten
2 to 3 garlic cloves
1 to 2 tbsp. Dijon mustard
Juice of 1/2 lemon
Freshly ground pepper

Romaine Lettuce

CROUTONS: Saute garlic in olive oil over medium heat for 1 minute. Add bread cubes, stir to absorb olive oil evenly. Reduce heat to low and cooking, stirring and turning cubes over often, until crunchy and golden brown, about 10 minutes. Remove cubes, leaving garlic in pan and place them on paper towels.

DRESSING: Combine all ingredients and stir.

SALAD: Tear up Romaine in small pieces. Add croutons and dressing and toss.
