SAUSAGE VEGETABLE ROLL WITH
MUSTARD SAUCE
 
3/4 lb. sausage
1 c. carrots, diced
1 c. asparagus, diced
1/4 green onions, diced
1/2 c. red pepper, diced
1/2 c. green pepper, diced
6 sheets phyllo dough

SAUCE:

1/2 c. chicken stock
1 1/2 c. half and half
1/2 tsp. salt
3 tbsp. flour
2 tbsp. butter
1 tsp. mustard

Cook sausage. Mix all ingredients for sausage rolls. Place 1/2 mix on 3 sets of 2 sheets phyllo dough. Roll. Bake at 350 degrees for 45 minutes.

Sauce: Mix half and half with chicken stock and bring to a boil. Add salt. make a paste of flour by adding hot liquid to flour. Add paste to sauce and stir thoroughly with wire whisk. Boil 2 minutes stirring constantly. Add butter and stir until dissolved. Add mustard and stir.
