TEA BREAD 
It's not bread, more a malt loaf! But if that’s what my great grandma from Ireland called it, then that’s good enough for me!

8 oz. mixed dried fruit
4 oz. Demerara (brown) sugar
1/4 pint hot tea (1/2 cup)
1 egg, beaten
1 rounded tbsp. orange marmalade
8 oz. self-rising flour

Put the fruit and sugar in a bowl, pour hot tea over and stir well then leave overnight.

Next day add a beaten egg, marmalade and flour. Mix well as the tea will combine everything.

Pour into a well-greased loaf tin and bake at 180°C (350°F) fan assisted (convection) for 50 to 60 minutes or until golden brown.

Once cooled cut and add a mountain of butter onto your moreish slices!
