PEACH TEA BREAD | |
5 c. flour 2 c. sugar 2 tbsp. baking powder 1 tsp. salt 1/2 tsp. nutmeg 3 c. finely chopped fresh peaches 2 tbsp. lemon juice 2/3 c. corn oil 2/3 c. milk 4 eggs 4 tsp. vanilla extract 2/3 c. chopped walnuts Heat oven to 350 degrees. Grease loaf pans. In large bowl combine flour, sugar, baking powder, salt and nutmeg. In large glass measuring cup, combine oil, milk, eggs and vanilla. In medium size bowl, combine peaches and lemon juice. Add oil mixture to flour mixture and stir only until dry ingredients are moistened. Mixture will be stiff. Do not over beat. Fold in peaches and chopped walnuts. Spoon into greased pans. Bake 55 to 60 minutes or until top is golden brown. Cool in pan on wire rack about 10 minutes. Remove bread from pan and cool to room temperature before slicing. |
