CHILI CON CARNE 
1 med. onion, chopped
1 garlic clove, diced
1 green pepper, diced
2 to 3 tbsp. fat or oil
1 lb. ground beef
2 c. canned tomatoes
2 c. canned kidney beans
2 to 3 tbsp. chili powder
1 tsp. salt

Brown onion, garlic and pepper in fat. Add ground beef and cook, stirring occasionally until beef is lightly browned. Add tomatoes and seasonings. Simmer 1 hour adding a little water if chili seems dry. Last half hour add kidney beans.
