CARROT CAKE 
2 c. sugar
1 1/4 c. Wesson oil
4 eggs
1 c. chopped walnuts
3 c. shredded carrots
2 tsp. baking soda
2 c. flour
2 tsp. baking powder
2 tsp. ground cinnamon

Mix all ingredients together; bake in bundt cake pan or square pan for 45-50 minutes at 350 degrees.

ICING:

1/2 box confectioners sugar
1/2 pkg. cream cheese
2 tsp. vanilla
1 tsp. cream
1/2 stick butter

Mix together.
