CARROT CAKE 
2 c. sugar
2 c. self-rising flour
1 1/2 c. Wesson oil
3 c. carrots, grated
1/2 tsp. baking soda
4 eggs
1 tsp. vanilla
2 tsp. cinnamon

Mix all ingredients, except flour, well. Add flour and bake at 350°F for 30 to 40 minutes.

Bake in 3 (8-inch) round pans.

Icing:

1 (8 oz.) pkg. cream cheese
1 c. chopped nuts (pecans)
1 box confectioners sugar
1 stick butter, softened

Mix all together.
