SWEET POTATO CAKE 
1 1/2 cups vegetable oil
2 cups sugar
4 egg yolks (4 whites)
3 1/2 tbsp. hot water
1 1/2 cup sweet potatoes, grated
1 1/2 tsp. nutmeg
2 1/2 tsp. cinnamon
2 1/2 cup self-rising flour
1 1/2 tsp. allspice
1 cup pecans

Preheat oven to 350°F.

Mix oil and sugar well. Beat in egg yolks 1 at a time. Mix all dry ingredients together. Add oil, potatoes, pecans and hot water. Beat egg whites until stiff. Add to mixture and put in three 9-inch round baking pans.

Bake at 350°F until cake is done.

ICING:

2 (12 oz. ea.) cans Pet evaporated milk
6 egg yolks
4 cups sugar
2 sticks butter
2 cups coconut flakes
1 cup pecans
2 tsp. vanilla

Heat in double boiler until thick. Let cool. Frost cool cake.

Makes 1 (3 layer) cake.
