SWEET POTATO POUND CAKE 
2 1/2 c. softasilk cake flour
2 c. sugar
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. baking powder
1 1/4 c. Wesson oil
1 tsp. pumpkin pie spice
1 tsp. salt
1 tsp. vanilla
4 eggs
2 c. cooked sweet potatoes
1 c. chopped nuts

Heat oven to 350 degrees. Grease and flour 12 cup Bundt cake pan. Beat all ingredients in large bowl on low speed, beat on medium speed scraping bowl occasionally 3 minutes.

Pour into pan. Bake until wooden pick inserted in center comes out clean. Bake 60-70 minutes. Turn out on serving plate, serve when cold.

This is a good recipe. Instead of pumpkin spice I use nutmeg.
