POUND CARROT SPICE CAKE 
3 eggs, beaten
1 1/2 c. Wesson oil
1 tsp. cinnamon
1 tsp. salt
1 sm. can crushed pineapple with juice
2 c. sugar
3 c. flour
1 tsp. nutmeg
2 tsp. baking soda
2 c. shredded carrots
1 c. pecans

Mix together well and pour into a loaf pan or bundt pan. Bake at 350 degrees for 1 hour.
