CHEDDAR SQUASH PUFF 
2 lb. zucchini or yellow squash
1 c. sour cream
2 egg yolks
2 tbsp. flour
2 stiffly beaten egg whites
1 1/2 c. shredded cheddar cheese

Combine 4 slices of crumbled bacon, 2 slices bread (in crumbs) and 2 tablespoons of melted butter.

Thinly slice squash. Cook in 3 quart pan with splash of water for 5 minutes. Drain well. Combine sour cream, egg yolks, and flour. Add egg whites. Layer in baking dish - half of squash, egg mix, cheese and all bacon. Repeat layers of squash, egg, and cheese. Sprinkle crumb mix over top; baked uncovered for 20 minutes at 350 degrees.
