PIZZA PUFF 
1 lb. good sausage
1/3 c. tomato paste
1 tsp. basil or thyme
8 slices Mozzarella cheese
8 slices white bread
2 c. milk
3 eggs, beaten
1/2 tsp. salt

Fry sausage 15 minutes. Drain and crumble. Add tomato paste and crumble. Butter a 9 inch square baking dish. Cover bottom with 4 slices bread, then cheese. Spread sausage mixture over cheese. Add another layer of cheese over sausage. Top with remaining bread. Beat milk, eggs and salt together and pour over all.

Refrigerate at least 6 hours or overnight, if possible. Bake at 350 degrees for 45 minutes until lightly brown and puffy.
