DIABETIC PEANUT BUTTER COOKIES 
1 1/2 c. flour
1/2 tsp. grated orange rind
1 1/2 tsp. baking powder
1 1/2 tsp. vanilla
1/2 tsp. salt
1 egg, well beaten
1/4 c. butter
1/3 c. orange juice
1/2 c. creamy peanut butter
3/4 c. seedless raisins
Artificial sweetener = 24 tsp. sugar

Sift dry ingredients. Cream butter, peanut butter, orange rind and vanilla. Add egg, orange juice and sweetener and blend well. Add dry ingredients gradually. Add raisins and mix well. Use 1 tbsp. dough for each cookie. Roll into a ball and place 2 inches apart on ungreased cookie sheet. flatten with a fork. 400 degrees for 15 minutes. These cookies are better 24 hours after baking.
