BUTTERMILK PIE 
1 c. sugar
3 tbsp. flour
2 eggs, beaten
8 tbsp. (1 stick) butter
1 c. buttermilk
2 tsp. vanilla
1 (9") unbaked pie shell

Preheat oven to 425 degrees. In a bowl, thoroughly combine the sugar, flour and eggs. Add the melted butter and buttermilk and stir until well mixed. Stir in vanilla. Pour the filling into the chilled pie shell and bake for 10 minutes. Without opening the oven door (important) lower the temperature to 350 degrees and bake for 35 minutes more. Cool on wire rack.
