PORTUGUESE KALE SOUP 
1 tbsp. olive oil
1/2 lb. smoked sausage, sliced 1/2 inch thick
1 qt. chicken broth
1 med. onion, thinly sliced
3 med. potatoes, sliced (peeled or unpeeled)
1 lg. (1 lb.) Kale shredded or sliced very thin
Salt, pepper to taste

Heat oil, saute the sausage just until the fat is rendered (3 to 5 minutes). Drain on paper towel and reserve.

Bring broth to a boil with onions and potatoes and simmer 10 to 15 minutes until potatoes tender. Mash the onions and potatoes in broth with potato masher. Add drained sausage and Kale. Bring to a boil and simmer until kale tender. Taste for seasoning. Serve piping hot with crusty bread, beer or red wine.
