GREEN SOUP OR KALE SOUP 
6 c. water
1 lb. potatoes, peeled and cut into quarters
1/2 lb. kale, washed, stripped form their stems and finely shredded
1/4 lb. chourico
4 tbsp. olive oil
1 lg. onion, peeled and cut into quarters
1/4 freshly ground black pepper
Salt to taste

Prepare the kale and put aside. In a large pot bring water to a boil, add potatoes, onions and salt. Boil over moderate heat until potatoes are soft enough to mash. Remove the pot from the stove, mash the potatoes and onions right in the pan or if you prefer, transfer them to a bowl, and mash with a potato masher or fork to smooth puree.

Return soup mixture to a moderate heat and stir in 3 tablespoons of olive oil. Add pepper and bring to a boil. Add kale and simmer uncovered for 4 to 5 minutes over the same moderate heat or until kale is tender. Stir in the remaining tablespoon of olive oil and taste for seasoning.
