PORTUGUESE KALE SOUP | |
2 med. onions, chopped 2 cloves garlic, minced 2 potatoes, diced 2-3 carrots, diced 1/2 head cabbage, chopped Bunch of kale, chopped 3/4 lb. linguisa, sliced 16 oz. can white kidney beans 30 oz. can Pastene ground peeled tomatoes 46 oz. can chicken broth Salt & pepper to taste Sauté onion and garlic in olive oil. Add diced potatoes, cabbage, carrots and half of the can of chicken broth. Cook until almost tender. Then add linguisa and kale, the rest of the broth and the canned tomatoes. Simmer 10-15 minutes. Season to taste. |
