ZUCCHINI PIE 
1 stick butter
1/4 c. onion
3 med. zucchini
1 c. tomato
Thyme
Basil
1 c. milk
3/4 c. Bisquick
1/4 c. sour cream
2 eggs

In frying pan saute sliced zucchini and onion until soft. Add in 1 cup tomato (skinned). Sprinkle with basil and thyme. Pour into ungreased pie pan.

In blender mix 1 cup milk, Bisquick, sour cream and eggs; pour mixture onto vegetables. Sprinkle grated Cheddar cheese on top of vegetables. Bake at 400 degrees for 30-35 minutes, uncovered.
