ZUCCHINI PIE 
4 med. zucchini squash, sliced
1 lg. onion, chopped
2 tomatoes, sliced
Salt
Pepper
Oregano
1 c. self rising corn meal
1 stick butter, melted
1 c. buttermilk
1/4 c. fresh grated Parmesan cheese

Spray round casserole or deep dish pie dish with Pam. Make layers of zucchini, onion and tomato in that order. Sprinkle with salt, pepper, oregano after each, to taste. Mix remaining ingredients until well blended. Pour over vegetables. Bake at 350 degrees for 45 minutes or until brown. Cut in wedges to serve.
