FRESH VEGETABLE PIE 
Make this in a snap! Use any combination of fresh, low-calorie vegetables or bits of meat. For variety, replace Parmesan with 1 cup shredded Cheddar cheese.

2 1/2 c. sliced zucchini
1 c. chopped fresh tomatoes
1/2 c. chopped onions
1/4 c. freshly grated Parmesan cheese
1/2 tsp. Italian seasoning
1 1/2 c. nonfat milk
3 eggs, beaten
3/4 c. biscuit mix

Mix vegetables and cheese together in a 9 inch, glass pie plate. Beat milk and eggs together. Add biscuit mix and beat until smooth. Pour over vegetables. Bake in 400 degree oven for 40 minutes until golden brown. Serve immediately.
