COUNTRY FRENCH CHICKEN POTATO
SALAD
 
1 tbsp. lemon juice
2 eggs
3 garlic cloves
1/2 tsp. salt and dash white pepper
1/2 c. oil
1 lb. sm. red potatoes, cooked, cooled, cubed
2 c. cubed, cooked chicken or turkey
1/3 c. sliced red onion
1/2 lb. sliced fresh mushrooms
1/4 c. green or red pepper, thinly sliced

In blender combine lemon juice, eggs, garlic, salt and pepper. Blend about 1 minute or until smooth. Add oil in slow steady stream while continuing to blend until smooth. Chill.

In salad bowl combine potatoes, chicken, onion, mushrooms, green pepper and dressing. Chill. Serve atop lettuce and tomato slices. Salad could also be dressed with a herbed vinaigrette instead of mayonnaise. Serves 4.
