PORK CHOPS AND RICE SUPREME 
4 pork chops
2 tbsp. shortening
Salt and pepper to taste
1 c. uncooked rice
1 can tomatoes
1 onion, sliced
1 can beef consomme
1/2 tsp. thyme

Salt and pepper pork chops and brown in shortening. Remove and set aside. Pour rice into drippings in skillet and cook, stirring constantly, until lightly brown. In large casserole dish place rice and remaining ingredients. Lay pork chops on top. Cover and cook for about 1 hour at 350 degrees or until liquid is absorbed.
