OVEN - BAKED PORK CHOPS 
6 (1 to 1 1/4 inch thick) pork loin or rib chops
1 c. (2 stalks) sliced celery
1 1/2 c. uncooked long grain rice
1 med. sliced onion
3 c. water
4 tsp. instant chicken bouillon
1 tsp. Italian herb seasoning
1/2 tsp. salt
1 med. green pepper, cut into 6 rings

Heat oven to 350 degrees. In 10 inch skillet, brown pork chops over medium heat. In 13 x 9 inch baking pan, stir together celery and uncooked rice. Place onion slices over rice; top with pork chops. In 2 quart saucepan, bring water to a full boil. Add remaining ingredients, except green pepper. Stir to dissolve; pour over pork chops. Cover with aluminum foil. Bake for 60 to 70 minutes or until rice is cooked and pork chops are fork tender. Remove foil; top pork chops with green pepper rings. Continue baking for 10 to 15 minutes or until green pepper is crisply tender.

To try to make it a little healthier, i simply used low sodium chicken broth for the liquid. I also added carrot slices with the celery. Seasoned the chops berfore searing with course pepper and a little garlic seasoning. Also added an extra red bell pepper on top. It was amazing and so easy!!!!

Very good recipe, but I think the time was a little long. The 1 1/4 thick pork chops came out a little dry. Flavor was a 5. I would suggest 45 to 55 min and just check the rice. Also, a nice cream of chicken (soup) with chopped bell peppers gives it a nice presentation over the rice... Enjoy.

Really fantastic recipe! I made it for some very picky eaters, and everyone loved it! Very moist. I actually didn't include the green pepper or the celery (it was last minute and I didn't have them in my cupboards) and it was delicious. I pulled it out a little early because of other reviewers. Next day left overs are pretty dry though, so try to eat it all the first day! btw this was the first time I had ever made pork chops.
