THE BEST CARROT CAKE | |
1 1/2 c. salad oil 2 c. sugar 4 eggs 1 tsp. salt 2 tsp. baking soda 2 tsp. baking powder 2 tsp. cinnamon 2 c. flour 3 c. grated carrots 1 c. chopped walnuts Blend oil with sugar. Mix salt, soda, baking powder and cinnamon with flour. Add to sugar mixture. Add carrots and nuts. Bake at 300 degrees for 50 to 60 minutes or until a toothpick inserted comes out clean. Cool. Frost with cream cheese frosting below. FROSTING: 1 (8 oz.) pkg. softened cream cheese 1/2 c. butter, softened 2 tsp. vanilla 1 box powdered sugar Blend all ingredients with mixer until creamy. |
