THE CONTINENT'S BEST CARROT CAKE | |
THE CAKE: 2 c. sugar 3 tsp. cinnamon 3 tsp. vanilla 3 c. grated carrots 1 c. vegetable oil 2 tsp. baking soda 2 c. flour 4 eggs 1 tsp. salt Combine all ingredients except carrots. Beat for 2 minutes. Mix in carrots. Pour into two 8 inch round cake pans which have been greased and floured. Bake 35-45 minutes at 350 degrees. THE FROSTING: 1 box powdered sugar 1 stick butter 8 oz. cream cheese Combine and blend until smooth. You can also leave out the powdered sugar for a less sweet frosting, or use only part of the box. Another idea is to add a little lime juice to the frosting mixture to create a subtle and enjoyable flavor. Wait for cakes to cool before frosting. |
